This bircher is great for breakfast, make it the night before for extra flavour. Or why not have it as a dessert, it's so versatile!

Method

1.

To make the bircher mixture, mix the oats, Greek yoghurt, flax and chia seeds together in a non-metallic bowl. Cover with clingfilm and chill overnight

2.

Take a tumbler and layer the bircher mixture with the stewed rhubarb and fresh ginger until all used. Serve straight away, or keep in the fridge for 2 hours.

  • 150g stewed rhubarb
  • fresh ginger, grated
  • 1 tsp flax seeds
  • 0.5 tsps chia seeds
  • 1 tsp honey or Agave syrup
  • 140g plant based Greek style yogurt
