This hearty meal which is full of flavour and could not be easier to make, it is wholesome and will keep in the refridgerator for upto 5 days.

Method

1.

Preheat a non-stick wok or frying pan.

2.

Dry fry the red onion and chilli for 3-4 minutes.

3.

Transfer to a saucepan and add the remaining ingredients. Simmer gently for 20 minutes.

4.

Season to taste with freshly ground black pepper before serving

Tips

A wholesome, hearty meal which is full of flavour and could not be easier to make. It will keep for up to five days in the refrigerator

Ingredients

  • medium red onion, finely chopped
  • small red chilli, sliced
  • 600ml Knorr gluten-free and lactose free vegetable stock
  • 1 tbsp tomato puree
  • freshly ground black pepper, to taste
  • 2 tsps oregano, chopped
  • 1x200g can chickpeas, drained and rinsed
  • 1x200g can red kidney beans, drained and rinsed
  • 1x400g can chopped tomatoes
