Cut the potato into chunky chips (you can peel if your prefer not to have the skin on). Blanch in boiling water for approximately 5 minutes. Drain well. Place the chips into a bowl and sprinkle over the spice mix, toss until evenly coated.
Preheat the oven to 220C, 425F Gas Mark 7. Spray a baking sheet with 2 squirts of oil spray.
Spread the chips onto the tray and turn them gently to coat with the spray
Cook for 35 - 40 minutes, depending on the thickness until they are crisp and golden on the outside and soft in the middle. Turn them once or twice during cooking
