Place the apples in a bowl and pour over boiling water. Leave for 1 minute then carefully remove and wipe dry with a soft cloth to remove any wax from the skins. Remove the stalks and push a wooden skewer firmly into each apple.
Line a baking tray with baking parchment or a silicone liner
Place the sugar and water in a saucepan with the golden syrup. Heat gently bringing to the boil and a temp of 150C. If you don't have a thermometer drop a little bit of the toffee into a mug of cold water, it should harden instantly.
As soon as the toffee is ready, remove from the heat. Quickly dip and roll an apple in the mixture until covered then set aside on the baking tray and repeat for the other 3 apples. Allow to cool completely before serving.
